We often say “this is delicious” or “this is not tasty,” but rarely do we ponder: is there an objective measure of taste? Can one dish be objectively better than another, or is it all a matter of personal preferences? Science asserts: yes, there are objective criteria that make food tasty for the majority of people. While individual preferences will always play a role, there are parameters that can be measured, described, and even predicted. From the balance of the five basic tastes to texture, temperature, and even sound — let’s delve into what truly makes food delicious.
Let’s start with the most fundamental — taste receptors. Our tongue can distinguish five basic tastes: sweet, salty, sour, bitter, and umami (meaty, rich). None of them makes food tasty on their own — the combination is important. Tasty food is food where these tastes are in harmony. For example, sweet and salty in caramelized pork, sour and sweet in teriyaki sauce, bitter and sweet in dark chocolate. Umami, discovered by Japanese scientists at the beginning of the 20th century, became the fifth taste — it is responsible for the “meaty,” “broth-like” note and is particularly important in cheeses, mushrooms, tomatoes, and fermented products. It is umami that makes a dish rich and profound.
Interestingly, our brain evaluates a dish not based on individual tastes but on their interaction. Too much sweetness is cloying. Too much salt is over-salted. Too much acidity is tartness. The ideal balance is when no taste dominates but all are present, creating complexity and depth.
Taste is not just chemistry, but also physics. How food feels in the mouth is no less important than its taste. Crunch, tenderness, creaminess, elasticity — all this affects perception. For example, fries: a crispy crust and a soft interior. Or souffle: lightness and airiness. Or risotto: creamy but not runny. Contrast of textures is one of the key techniques in professional kitchens. Crunch and softness, warmth and cold, smoothness and graininess — the brain loves diversity.
Studies show that texture can even outweigh taste. If food has the right texture, we forgive its imperfections in taste. Conversely, even perfectly prepared food with bad texture (such as overcooked rice or rubbery meat) will be perceived as not tasty.
Temperature directly affects taste. Cold dulls sweetness and enhances acidity, which is why ice cream seems less sweet than a warm dessert. On the contrary, hot food enhances aromas and makes taste more intense. This is why soups and broths are better eaten hot, and gazpacho cold.
It is also important how a dish is served. A hot dish should be genuinely hot, not just warm, and a cold dish should really be cold. The difference in temperature between the dish and its ingredients (for example, warm fish and cold sauce) can create an interesting contrast that is perceived as a pleasant surprise.
Most people are not aware, but up to 80 percent of what we call “taste” is actually smell. Smell is much more delicate than taste: we can distinguish thousands of odors, while there are only five taste sensations. It is smell that makes wine — wine and coffee — coffee. That is why when our nose is congested, food seems tasteless.
Smell works in two ways: through the nose (aroma before the food gets into the mouth) and through the nasopharynx (when we chew, aromatic molecules rise from the mouth to the nose). Tasty food is food with a rich, complex aroma that unfolds gradually. That is why professional tasters pay so much attention to the “bouquet” of a dish: not only the taste but also how it smells.
It turns out that not all combinations of products are equally successful. Studies show that products that have common aromatic molecules pair better together. For example, chocolate and orange, tomatoes and basil, cheese and grapes — they have common chemical compounds that our brain perceives as “correct.” This explains why some combinations seem harmonious to us, while others seem strange.
In professional cooking, this knowledge is used to create unexpected but tasty combinations: for example, strawberry with balsamic vinegar, chocolate with salt, watermelon with feta. The brain loves surprises as long as they do not disrupt the overall harmony.
Taste is not just objective chemistry but subjective perception. We eat not only with our mouths but also with our eyes, ears, and even memory. Expectation affects perception: if we expect a dish to be tasty, it will likely seem that way. If we are in a negative mood — even good food can disappoint.
Atmosphere also matters: tableware, lighting, music, even the weight of the utensils — all this affects how we evaluate taste. Studies show that food eaten in pleasant company seems tastier. And food served in a beautiful plate is rated higher than the same food in a plastic container.
Still, despite all the objective criteria, taste remains deeply subjective. Our preferences are formed under the influence of culture, family, childhood memories, and even genetics. For example, some people are more sensitive to bitterness (due to the TAS2R38 gene) and do not like broccoli or coffee. Others, on the contrary, love spicy or spicy food.
In addition, habit plays a huge role. What we eat from childhood seems normal and tasty, while unfamiliar food often seems strange. This is why one person may consider oysters a delicacy, while another may not understand how one can eat them at all.
Objective criteria for tasty food do exist. These are the balance of the five basic tastes, the richness of aroma, the right texture and temperature, and the harmonious combination of ingredients. But these criteria always work within the context of subjective perception. Food may be objectively good, but if it does not coincide with our personal preferences, we will not consider it tasty. Conversely, sometimes we like what is objectively imperfect but is connected with warm memories or pleasant company.
In the end, “tasty” is a dialogue between the objective reality of food and the subjective reality of a person. It is this dialogue that makes gastronomy so captivating. For if there was only one “correct” taste, eating would be boring.
